Zucchini Bread

Zucchini Bread
2 cups sugar
1/2 cup oil
1/2 cup applesauce
3 eggs
2 cups shredded zucchini
1 tsp vanilla
1/2 cup yogurt
1 1/2 cups whole wheat flour
1 1/2 cups white flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp cloves
1/4 tsp ginger
1 cup dried cranberries
Combine well the first seven ingredients (the wet ingredients). Add
dry ingredients and stir. Fold in nuts or raisins. Pour into 2
well-greased loaf pans. Bake at 350 F for one hour. Makes two
loaves.
